Chicken Enchiladas
These are frequently a fixation food of mine, and the Hippie always indulges me because he's nice like that.
Chicken enchiladas. A classic. They may not seem like the sexiest thing in the world, but any food that you can prepare ahead of time to freeze and/or enjoy later that’s actually good? That will always have my heart all aflutter. Add in the fact that the Hippie makes his own enchilada sauce (I’ll try and get that one from him too, promise), and this is something that I ask for even more than the cookies.
